2 cups nonfat chicken broth or vegetable broth
1 cup cauliflower florets
1 white potato, cut into large chunks
2 large carrots, cut into chunks
1/2 red bell pepper, seeded and diced
1/2 onion, diced
1/2 cup fresh or frozen green peas
1 Tbsp curry powder
1 garlic clove, minced
3 Tbsp seedless raisins
2 Tbsp honey
1/2 cup plain nonfat yogurt
Bring chicken broth to a boil in a large pot. Add cauliflower, potato, carrots, red pepper, onion, peas, curry powder, garlic, raisins, and honey. Cover partially and simmer for 20 minutes, or until vegetables are tender. Remove from heat, stir in yogurt, and serve.
